Trout is a medium-sized freshwater fish that lives in cold waters, primarily in Northern Portugal. Our trout comes from the Rio Coura in northern Portugal. Trout is a well-known fish on the Portuguese menu.

Nutritional value

Trout is rich in minerals, proteins, vitamins B12, B6, and D, and
Omega-3 fatty acids. Therefore, its consumption helps prevent brain and cardiovascular diseases and helps maintain bone health.

Sauce

Onion relish sauce is a unique sauce with diverse flavors where notes of vinegar, onion caramelization, and various spices prevail. The sauce is made in small batches to ensure the onion caramelizes slowly and evenly; vinegar and sugar are added, along with other ingredients, each in the ideal proportion to achieve an extremely special flavor your palate will not forget.

Production method

The trout is prepared in our facilities and cooked for as long as necessary to give the meat the ideal texture. After cooking, the trout is processed by hand and placed in the can by staff accustomed to canning fish so it looks as attractive as possible, keeping the fillet as whole as possible. The sauce is first placed by hand at the bottom of the can, then the fish fillet is added, and finally, the can is bathed in typical Portuguese extra virgin olive oil. Each can is then closed one by one, washed, sterilized, and carefully packaged.

Our fish are selected based on what is fresh, in season, and above all, inspiring. This, combined with sauces handcrafted seasonally, means no two batches (or even two cans) are completely identical. Rather than trying in vain to enforce uniformity for the sake of repetition, we embrace this uniqueness of experience, knowing each can will be delicious in its own distinct way. This makes our products more akin to single malt Scotch than blended whisky.
