Vintage sardines 2025 Coralie Joulin

These French vintage sardines must have a fat content exceeding 12%.

Upon arrival at the port, the sardines go directly to the cannery, where they are sorted, trimmed, and packed by hand one by one. They are then covered with extra virgin olive oil.

The tins have a shelf life of at least 10 years; it is recommended to wait at least 3 to 4 years before tasting.

Over the years, the sardines will confit in the olive oil, and the central bone will melt into the flesh.

The flavors of the sardines can vary from year to year. The weather, ocean temperature, and sea currents are all factors that influence the flavor profile of the vintage.
