Tuna fillet from the island of São Jorge in the Azores, seasoned with peppers from the Azores. Skipjack tuna caught in Atlantic waters using the traditional, centuries-old pole and line method. The tuna is then cooked in brine according to the traditional recipe of the historic cannery on São Jorge. This results in an incomparable texture and flavor.
