At Los Peperetes, they process the sea bass with the utmost care, removing the bones and skin by hand until the fillets are meticulously cleaned. They cook them lightly to achieve the desired tenderness and then pack the fillets neatly into the tin.

In this case, a very delicate green sauce is added, prepared in the traditional way with Albariño from the Pazo de Rubianes vineyards, garlic, onion, parsley, and spices. The result is a ready-to-eat dish straight from the tin with an incredible texture and the unmistakable aromas of the award-winning Pazo de Rubianes Albariño.
