A vintage series

With this series, we aim to honor the historical know-how of the cannery and the creative work of contemporary artists from our region. The vintage series guarantees top-quality sardines that improve with age.

A seasonal catch

Our sardines, Sardina pilchardus, are caught during the peak season, from May to October. During this time of year, the sardines are at their fleshiest, making them the most tender and flavorful. The sardines come from the ports of Lorient, Concarneau, Douarnenez, and Saint-Guénolé in Brittany, and occasionally from St Gilles Croix de Vie in Vendée.

Traditional production in our Penmarc’h workshop

The sardines are processed fresh, headed, and gutted by hand. They are fried in oil. It is this traditional preparation method that gives them the preserved flavor that sardine lovers particularly appreciate, and which allows them to mature better in the tin. Jean-François Furic’s father and grandfather already worked this way. The frying oil is changed regularly, more often than the Label Rouge standard requires.

Packed by hand

Before canning, we trim the tail and collar. Canning is done by hand in our cannery and is called “en bleu.” The backs are visible when the tin is opened, unlike “white” preserves where the bellies are visible.
We place 4 to 6 sardines in each tin.
