Güeyumar never serves whole sardines. He divides the sardines into head pieces and tail pieces. These are tail pieces. Sardines from Asturias or Rias Baixas, depending on the season. Roasted over holm oak wood and preserved in a marinade, with Arbequiña de Castilla Canena extra virgin olive oil, apple cider vinegar, and aromatics.

Grilled sardines in escabeche
