Güeyumar never serves whole sardines. He divides the sardines into head pieces and tail pieces. These are the tail pieces. Sardines from Asturias or Rias Baixas, depending on the season. Hand-cut, roasted over holm oak wood, and preserved in “Arbequiña de Castillo Canena” extra virgin olive oil, a mild, high-quality oil.

Grilled sardines
