Vintage sardines 2019 Delphine Cossais
These French vintage sardines must have a fat content exceeding 12%.
Upon arrival at the port, the sardines go directly to the cannery, where they are sorted, trimmed, and packed by hand one by one. They are then covered with extra virgin olive oil.
The tins have a shelf life of at least 10 years; we recommend waiting at least 3 to 4 years before tasting.
Over the years, the sardines will confit in the olive oil, and the central bone will melt into the flesh.
The flavors of the sardines may vary from year to year. Weather, ocean temperature, and sea currents are all factors that influence the flavor profile of the vintage.
Fresh baguette, perhaps a little butter, and a glass of wine are all you need to reveal the full flavor of these exceptional vintage sardines.
