Bonito tuna ventresca in olive oil

Ventresca is the most prized part of the white tuna. It is prepared according to traditional methods no longer in common use today, with the care and attention of our craftswomen’s expert hands.

Due to its fat content, it has a more intense flavor and a much softer texture than the rest of the fish. Its gelatinous texture and the way it is sliced make it the most valued part of the white tuna.

When the white tuna arrives at our workshop, we remove the belly fillets and cook them. We then separate each slice by hand and place them one by one into their tins.

Our canned white tuna belly is the result of a careful selection of the finest fresh specimens, line-caught in the Cantabrian Sea.
