At Los Peperetes, we source the finest Bonito del Norte, line-caught in the Cantabrian Sea, always selecting the best specimens in terms of size and freshness to obtain a delicate product that is very pleasant on the palate.

In our workshop, we carefully clean each piece, though we do not remove the backbone initially to maintain consistency. We then cook the tuna in salted water until the exact cooking point is reached and gently remove the bones. This process, combined with top-quality olive oil, ensures that our white tuna has a tender texture and an exquisite flavor.
