But they also want to be creative: their preserves have their own unique character, resulting from a constant pursuit of excellence. <\/p>\n<p>Each of their preserves is the result of a meticulous process. It all begins with the use of traditional traps as a fishing method, respecting the marine ecosystem. They clean all their shellfish by hand to ensure that flavor and freshness remain intact.
